Roasting chicken pieces is easy and the kids love it. They eat the legs like fried chicken and the thighs and breast with a fork and knife (most of the time). The trick is getting the skin crunchy and browned. This is my safety dish, and it’s good the next day in someone’s lunch or a part of leftovers for dinner.
Ingredients and preparation
- chicken pieces
- 1 lemon or fresh lemon juice
- kosher or sea salt
- olive oil
Preheat the oven to 400 degrees F.
Wash and dry chicken pieces.
Place chicken in a baking dish.
Spray or brush olive oil on each piece (both sides).
- Sprinkle kosher salt on both sides of each chicken piece to your liking.
- Squeeze the lemon over chicken pieces, toss the lemon in the baking dish, and bake for 40 minutes or until the skin is crispy and browned.
