Fish tacos with tortillas – Comfy Belly

What has gluten-free, grain-free, sugar-free, lactose-free and dairy-free recipes, a lay-flat binding, and nurturing tips?

Here’s the recipe for soft tacos or tortillas, using just coconut flour. It’s also in my book, Cooking for the Specific Carbohydrate Diet. Enjoy!

Comfy Belly: Fish tacos

I’m sharing my tortilla recipe from the book, which can be used in so many ways (more ideas to come). You’ll find the complete fish taco recipe in the book, which includes the marinated fish, avocado crema, pico de gallo, creamy coleslaw (not shown), and of course the tortillas.

Tortillas {coconut flour}

You can bake these if you prefer. Preheat your oven to 400 degrees F/200 degrees C and line a baking sheet with parchment paper or nonstick baking mat. Pour the batter in the shape of cirlces on the sheet and bake for 15 minutes. Use a spatula to flip them midway, at about 8 minutes. You can make the tortillas about the same size by measuring each circle in tablespoons, making each circle 2 tablespoons of batter, and leave space between each tortilla.
If you find these too eggy (some comments), add more coconut flour, starting with 1 teaspoon.
Servings: 6 servings
Calories: 65kcal

Ingredients

  • 2/3 cup egg whites about 4 large egg whites, or 8 tablespoons
  • 2 tablespoons oil
  • 1/4 cup dairy-free milk
  • 1 tablespoon fresh lime juice
  • 1 tablespoon coconut flour
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

Instructions

  • In a bowl, whisk together the egg whites, 2 tablespoons oil, milk, and lime juice.
  • Add the coconut flour, cumin, and salt; whisk until well blended. Let the batter sit for a few minutes so the coconut flour can absorb the moisture.
  • Heat the skillet over medium heat and add about 1 tablespoon of butter or oil.
  • Once the skillet is warm, pour in about 2 tablespoons of batter to make a 4 to 5-inch tortilla.
  • After a few minutes, when the edges and bottom are starting to brown and you can easily slip a spatula underneath, flip the tortilla to the other side.
  • Transfer the tortilla to a plate and repeat with the rest of the batter. Place waxed apper or parchment paper between the tortillas. Serve, or cover and store in the refrigerator for up to a week or so.

    Hi, quite new to the whole SCD cooking …..this recipy looks and sounds amazing but what do you mean bybdairt free milk?

      Dairy-free milk can be almond milk, coconut milk, cashew milk, and homemade is best to insure there are no additives but there are some SCD-legal brands.

      Not sure if it needs more flour or wht but it is much more egg white consistency than tortilla. Curious if baking would have been easier too.

        If you read my recipe notes, I talk about baking them. The flavor is just a bit different (no oil) but much easier. This is not going to taste exactly like an all-purpose flour tortilla. You can add more coconut flour for sure.

    Tries theses today and they all died on me…I used cashew milk instead…and they ended up being coconut scramble eggs lol…so sad and disappointed.. No flipping or anything

      yes, these can be tricky and they’re delicate. I find letting them fry for a long time on one side, or adding a bit more coconut flour makes them stay together.

      Yes, they do! Place parchment paper or paper towel between them for easier separation.

    Tried these tonight and the first one didn’t turn out – I think one tbsp butter is too much in the pan so I reduced it and the rest turned out amazing!!!! Thanks once again:)

    I have tried your tortillas when an SCD friend of mine gave some to me to try. They were delicious! I couldn’t believe that I could actually make tortillas again for my breakfast wraps. I was so excited!

    I have a question though: I have been strict SCD for 20 weeks today (YAY!), and have tried to introduce almond or coconut flour into my diet every now and again for the last 6-8 weeks, including in this recipe and others you have on your site. Every time I eat either flour I find that I have problems with constipation. Why would this happen? I am careful about what I eat, drink plenty of water, and always try to incorporate as much SCD-legal fibre in my diet as possible. I was wondering your thoughts. Thanks in advance!

      Yes, just seal them tightly and thaw them before reheating in a skillet or oven.

    ok, so is that correct 2T coconut flour or 2Cups? hubby’s gut killing him and we are cutting out all grains. haven’t eaten meat (except for salmon) for 35yrs. he is hungry and losing weight. trying to find something. he did add chicken other day.

      yes, 2 tablespoons. Coconut flour goes a long way and absorbs quite a bit of moisture in a recipe.

    I too preordered your cook book and I LOVE the recipes in it. the Blueberry “Coffee” slice is just so delicious, not to mention the simple Sandwich Bread… finally something to have with melts! The only negative comments I would make (and believe me I hate making negative comments) is that are no weight measures on the ingredients which makes it hard for getting the recipe right with the cup measures differences between countries and that there is not an alphabetical index of the different recipes. Otherwise I go to your book first to “look” for something new to make and generally find something and end up going no further! Thanks for making a brilliant book.

    I tried making it but I could not flip it over as it started breaking when i tried to. Is this recipe too delicate to make large tortillas? My batter was still runny after leaving it to rest for 10-15mins, is that suppose to be the consistency or should it be like a thick pancake mixture?

      Yes, it is a bit on the delicate side, but should be too difficult. Try adding a bit more coconut flour and possibly spreading it less thin. Yes, it will be runny.

    Love your site as it has been a real life-saver for me. Looking forward to the new book and making the tortilla recipe. Do the tortillas freeze well? I like to fill mine with grilled mild white fish, shredded lettuce, and carrot, thinly sliced avocado and a squeeze of fresh lime.

      hmm. I don’t know – I haven’t frozen them, so not sure. I have stored them in the refrigerator for up to a week, covered/sealed.

    I usually use leafy green as wraps but I think I’ll have to give this recipe a try! I usually stuff my (leafy) tortillas with either a taco seasoned beef and guacamole or an asian chicken mixture with sesame oil coated broccoli and mushrooms. Delish!

    Wow! So many great comments and wonderful taco filling ideas. What a wonderful blog! I went gluten free a couple years ago and have been dabbling in “Paleo”, but now I’m being treated for SIBO, so I’m starting the SCD! Recipes like yours make it seem like it’s going to be a breeze. 🙂 I live in Portland, OR, and one of our favorite restaurants here, Cruzroom, serves fancy tacos! My 3 favorites I would love to try to adapt to SCD. 1) Fried pickles, applewood smoked bacon, cheddar cheese, onions, slaw, and a special sauce. 2) Seared pork belly, apple-vinaigrette slaw, topped with Cotija cheese. 3) Carlton Farms pork braised in a spicy red curry sauce, topped with a cilantro-lime slaw and chicharrones…Yum!

      Fish is actually quite easy and cooks up fast. Just place the fish in lime juice for a few hours (in the fridge) if you want to marinade it. Then cook it in a pan for a few minutes on each.

    I’m back. I made these last night. You are really talented! They were a huge hit! The things I liked best are that:
    1) they still fold over – the other recipes end up more like big flat chips.
    2) they are flip-able (is that a word?. SCD stuff just never seems to stick together well. They were still really fragile, but I guess that’s to be expected if there are no fake ingredients gluing the things together.
    3) they weren’t too eggy.

      Thanks Ginger! Guess what? I re-baked some last night and they get tougher the longer you cook them, and less fragile. So try cooking them just a bit longer, a bit more brown than my photos. They don’t really burn as much as darken.

    This book sounds great! Loved your other one. I loved tortillas with grilled veggies – mushrooms, onions and red peppers – and cheese. Also like them with rotisserie chicken and mixed toppings. Easy fix for day 2 of the chicken!

    These look delicious. I’m about a month and a half into the specific carb diet, and I’m loving it. I’ve got 2 weeks left till I’m completely medication free. (I’ve been on an immunosuppressant for a year and a half for my crohns disease). I would love to win the cookbook, I feel like I’m on the Internet 24/7 searching for recipes. Your blog is beautiful.       Hi Casie. I just made them too. It shouldn’t matter if it’s lemon or lime, although I haven’t tried lemon. what didn’t turn out exactly? they’re basically made like pancakes and you just need to let them brown enough on one side before you flip them.

    Looks amazing! I eat paleo, and I have yet to perfect the ratios for taco tortillas that don’t split while cooking or eating, so next up I will be trying your recipe!

    My favorite tacos are with homemade chorizo (pork sausage with chile peppers, paprika, garlic, s&p), guac, and mango, red pepper salsa. Mmmm!

    This website has been a serious lifesaver to my family. I have 4 young children, two of which have severe allergy to grain. Thanks to you I have been able to keep my sanity and the complaining about meal time to a minimum lol. I am very much looking forward to the cookbooks release, I think it will be used daily over here. I love the tortillas! I can’t choose between the enchilladas and the lasagna though 🙂

    These sound yummy! Will give them a try with the chicken breast I have in my refrigerator today. I will cook these up with cumin, fresh lime juice and cayenne pepper. And I fillthem with some of my brown lentils I cooked in the crockpot yesterday along with the fresh ingredients I have on hand. Thanks for sharing!

Being new to scd, I do not have any suggestions for the fillings of tortillas, because I haven’t figured out how to make them without starch (and still taste delicious)!

    I have been searching for a solution to tortillas that doesn’t require “illegal” ingredients forEVER (4 years actually)!     Soft Tacos!     Always liked your column and I love your new cookbook. Everything so clean and simple. I am going to have my 23 year old daughter try some recipes as she has some food allergies and eczema and I believe it would help her as she is trying to go gluten free and cut certain carb and she can make this wihtout alot of fuss.     That sounds amazing… I grew up where eating tortillas were an every day part of life.. one of my most favorite things in the world but am highly gluten sensitive.. sure stinks..

    My favorite taco filling is anything & everything. Right now, smoked pork butt comes to mind since my son in law just smoked 2 giant pork butts.. fall apart delicious!! Throw on a little cilantro or pico de gallo & you’ve got yourself a tasty meal.

      I can’t beleive you made tortillas. No more just eating meat, chz and veggies with my family on taco night. I can’t wait to try them. Long time fan. Thank you for posting all of your awesome alternatives for people on SCD. PS. I will fill mine with refried black beans, chz, lettuce, tomato and avocado.

        Thanks Angie. It’s not the traditional texture, but the flavor and texture is works well and it doesn’t fall apart.
