Five Minute Tomato Sauce

Tomato Sauce

Keep this recipe in your back pocket because it's easy and you never know when you might need a batch of tomato sauce in a matter of minutes.

The key ingredient is a jar or can of crushed tomatoes, a dash of olive oil, and a few herbs.

For folks who follow the Specific Carbohydrate Diet (SCD), there is some confusion around whether canned tomato sauce and other canned fruits and vegetables are allowed. While you may feel strongly  one way or the other, my understanding is cans with no additives can be used. That said, I prefer crushed tomato sauce sold in glass jars because I don't like the idea of the acidic tomato sauce sitting in metal or plastic. You can also make tomato sauce from tomato juice.

To insure a product is safe to use contact the company to confirm all the ingredients they use to make their tomato sauce. I am familiar with some brands that are safe to use however the list changes depending on the latest info from the manufacturer. As of this writing the approved tomato sauce brands included Cento, Utopia, Pomi, Pasatta imported from Italy, sauce from https://www.wellbees.com, Bionatura, and Trader Joe's sauce and paste.

Five Minute Tomato Sauce

This recipe yields about 3.5 cups or 28 ounces of tomato sauce.
Feel free to add or change up the herbs and spices. And you can freeze leftovers, or double the recipe and freeze half.
Servings 8 servings
Calories 38 kcal

Ingredients
 
 

  • 1 teaspoon olive oil
  • 2 cloves garlic peeled and crushed
  • 28 ounces crushed tomatoes
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh basil chopped
  • salt and pepper to taste

Instructions
 

  • Place a saucepan over medium heat and add the olive oil.
  • Add the crushed garlic and cook for a minute or so, without burning it.
  • Add the oregano, basil, and tomato sauce and bring to a steady simmer. Add a pinch or so of salt and pepper.
  • Simmer for 5 minutes, stirring occasionally.
