I created this recipe on a whim a few nights ago because I had all the ingredients for the sweet and sour sauce, plus some leftover frozen shrimp.
This is a variation on my Sweet and Sour Meatballs recipe, which I updated to include cauliflower rice and stir-fried peppers recipes so you can make a meal out of the recipe. You can easily make this recipe as an appetizer by preparing the sauce and shrimp, and then dipping the shrimp in the sauce.
The sweet and sour sauce recipe yields quite a bit of sauce, so either cut the ingredients in half, or save the leftovers in the refrigerator for a few days, or freeze for a few months.
To bring this together as a meal, first get the sauce simmering, make the cauliflower rice and set it aside, sauté the peppers, and then add the shrimp to the peppers. Finally, add some sauce to the shrimp and pepper mixture and place it over the rice. I also added some diced green peppers over the plate.
