I’ve gathered my favorite grain-free, gluten-free, SCD holiday meal recipes to make it easy for you to plan yours. Some recipes have been on my site for a while, and some are a bit newer, like my grain-free gravy, dairy-free creamed spinach, and dairy-free cream of mushroom soup.
Many of these recipes can be made ahead of time to help you plan ahead and balance your time in the kitchen, get others to help out, and make some of them at least a day or two ahead of time.
I’m going to be adding a new recipe plugin in the next few months that will offer nutritional info, a shopping list, and lots more! And I’ll continue to update this page with new recipes.
Roasting a Turkey
One of my favorite ways to roast turkey and all kinds of poultry is by obtaining a whole, healthy bird that has been treated compassionately, and break it down into parts before roasting it. I use a pair of kitchen scissors explicitly made for this task. This allows me to cook the parts more evenly and season more of the surface area of each part.
This technique is similar to a butterflied or spatchcocked turkey, however I take it a step further by cutting up the wings, legs, and breasts. By breaking up the turkey, I can cook the white meat for a shorter amount of time than the dark meat, and avoid drying out the white meat areas of the turkey when cooking the bird as a whole.
When I roast the bird as whole, I keep it simple by spreading butter, herbs, and salt under and over the skin, and then roast. You can also use a combination of butter and olive oil. Pretty simple, and it works. Another favorite technique is a dry brine which helps keep the juices inside and creates a crunchy outer crust. And you can combine both methods: buttering and seasoning under the skin and dry brine the outside.
To add grain-free stuffing to the inside of the turkey, first remove any smaller parts that are tucked in there (like the heart, gizzards, and liver) and then use one of my stuffing recipes below.
