Reduce the apple cider. Add 1 cup of apple cider to a small saucepan and bring to a low boil. Simmer until you’re left with about 1/3 cup of apple cider. It usually takes about 15 minutes. Make sure you have at least 1/4 cup for the recipe.These donuts can be made with your favorite granulated sugar (mine is date sugar) or maple syrup or honey. If you use date sugar or another granulated sugar as the sweetener for the donuts, you may want to add a bit more apple cider, apple juice, or water to moisten the batter and make it more fluid.If you're eating low carb, replace the maple syrup with low carb syrup. After a few hours the topping starts to combine with the donut a bit (when using date sugar), so if you want to see the topping, add it right before eating them. Alternatively, I added a simple glaze you can use with either maple syrup or honey.Note: I originally had 2 tablespoons of sweetener but found that 3 tablespoons works better. If you're glazing the donut and want to keep the sweetness down, you can go back to 2 tablespoons of sweetener knowing that the glaze will sweeten the donut as well.
