To make this recipe ahead of time, bake the crust and prepare the apple filling. Then when ready, add the apples to the crust, top with the streusel topping and bake for 12 minutes.If you are making this ahead of time and then placing it in the refrigerator, cool it fully, and let it sit out at room temperature for at least an hour. If you place it in the refrigerator too soon, the heat that emanates from baking will get reabsorbed into the pie bars. Once it's fully cooled, cover it lightly with some foil or paper towel so you don't trap moisture in the pie and can avoid a soggy crust. I use an 11 inch by 7 inch tart pan and line it with parchment paper, but any baking dish with similar dimensions will work. The parchment paper makes it really easy to slice and serve the apple pie bars. Also, definitely let it cool fully before slicing it.You can store it in the refrigerator for a few weeks and warm it up or serve it cold or at room temperature.

Streusel topping
1cupblanched almond flour
pinch of salt
2tablespoonsmaple syrup or honey

Prepare a tart pan or baking dish with parchment paper.
Combine all the dry ingredients in a bowl and whisk to blend well.
Add all the wet ingredients and mix with a spatula or spoon.
Press the dough into the tart pan or baking dish.
Bake for 15 minutes. Cool.
Apple filling
Add all the apple filling ingredients to a bowl and gently toss the apples with a spatula to coat them well.
Place a stockpot with a cover on a low heat and add the apple mixture.
Bring the apples to a steady low simmer and cover and stir occasionally for about 12 minutes or until they're floppy and starting to brown. You want some liquid on the bottom, only about a tablespoon or so. if there's too much liquid you can simmer with the top slightly off to let some moisture escape. If it's too dry you can add a drop of water.
Fold the apples and any liquid on top of the crust.
Streusel topping
Preheat your oven to 350℉.
Add the flour and salt to a bowl and whisk to blend.
Add the remaining ingredients and blend with a spatula to form crumbled dough.
Spread the crumbled topping over the apples.
Bake 12 minutes or until crumble topping begins to turn golden. Cool fully before slicing.
