trimmed and roughly chopped

celery stalks
trimmed and roughly chopped

onion
trimmed and quartered

salt

Instructions
Remove all the skin and fat from the chicken.
Place the chicken in a large stockpot and add the water. Bring it to a boil.
Reduce the heat and skim off any foam that develops.
Add the vegetables and salt.
Simmer for four to six hours.
