Chili Roasted Butternut Squash

Chili Roasted Butternut Squash I'm on a bit of butternut squash run, and this recipe is one of my favorites so far. You can use this seasoning with the fries recipe as well, and it goes great with a bit of lime and possibly a drizzle of ranch dressing if you're feeling it.

I also confess to using frozen butternut squash cubes from my freezer, no thawing at all. Fresh cut is ideal, but it's nice to know you can pull this recipe together at a moments notice. Just keep a few bags of frozen butternut squash cubes in your freezer, or buy them fresh cut in the market to save time.

In case you're new to butternut squash, it has the taste of yams and sweet potatoes, with way less carbs, so it's a perfect food for low carb living. It's also a great source of potassium, vitamin A, and C.

This is a great side to any dish, or just as a snack when you have a craving for something spicy and sweet. Enjoy!
