Apple Pie Bars

I'm so excited to share this recipe. I planned to make it last year, then I planned it again earlier this year, and I finally got to it this week. So here it, an apple pie bar recipe that is grain free, gluten free, egg free, dairy free, and easy to make and make ahead.

Apple pie bars are a great option if you're looking for a variation on apple pie. I based this recipe on both my apple pie recipe and my apple crisp recipe, with the addition of a really nice crust. I'm so in love with this crust that I'm going to use it in the future, with other pies and bars.

To make this recipe ahead of time, bake the crust and prepare the apple filling. Then when ready, add the apples to the crust, top with the streusel topping and bake for 12 minutes.

I use an 11 inch by 7 inch tart pan and line it with parchment paper, but any baking dish with similar dimensions will work. The parchment paper makes it really easy to slice and serve the apple pie bars. Also, definitely let it cool fully before slicing it.

You can store it in the refrigerator for a few weeks and warm it up or serve it cold or at room temperature. And of course it goes great with ice cream, coconut whipped cream, or whipped crème fraîche. Enjoy!

    Hi Erica!
    So I made the apple pie bars the day before
    and kept the dish in the fridge. Unfortunately
    the crust and topping got soggy like. Do you
    have any suggestions on how to crisp it up
    again? If I were to put it in the oven, how long
    and at what temperature?

      Hi Briget. I haven't had trouble with the crust or topping getting soggy but I make it, cool it fully, and let it sit out at room temperature for at least an hour. If you place it in the refrigerator too soon, the moisture that emanates from baking will get reabsorbed into the pie bars. Yes you can definitely reheat it at around 300 degrees F for about 10 minutes. It might be better to reheat individual slices. Note that if you're making this recipe ahead of time in the future, let it cool completely and cover it lightly with some foil or paper towel so you don't trap moisture in the pie and can avoid a soggy crust. Another option that I mention is to bake the crust and prepare the apple filling. Then when ready, add the apples to the crust, top with the streusel topping and bake for 12 minutes.Hope that helps.

    I was wondering if a 9 x 13 pan would work?
    Would I need to increase the amount of
    ingredients?

      Hi Bridget,

      Yes, a 9 x 13 pan will work, but your bars will lose a bit of height and you'll have a bit less streusel topping. Another option is to add another apple to make up for the height loss and then double the streusel topping to add to the crust and the topping. The crust is the same recipe as the topping, doubled.
