Gentle Butternut Squash Soup

- 1 High speed blender
Ingredients
- 2 cups butternut squash cut into cubes or small pieces
- 4 cups gentle vegetable broth
- ½ teaspoon salt or to taste
Instructions
- Add the squash, broth, and salt to a saucepan and bring to a boil.
- Simmer with the top on for about 20 minutes or until the butternut squash is very soft.
- Cool for about 10 minutes and then puree in a high speed blender.
- Store in the refrigerator for a few days or freeze for a few months.
