Gentle Butternut Squash Soup

Servings: 4 servings
Calories: 47kcal

Equipment

  • 1 High speed blender

Ingredients

  • 2 cups butternut squash cut into cubes or small pieces
  • 4 cups gentle vegetable broth
  • ½ teaspoon salt or to taste

Instructions

  • Add the squash, broth, and salt to a saucepan and bring to a boil.
  • Simmer with the top on for about 20 minutes or until the butternut squash is very soft.
  • Cool for about 10 minutes and then puree in a high speed blender.
  • Store in the refrigerator for a few days or freeze for a few months.
