Bowls are a great way to make a meal out of a bunch of sides with a variety of flavors, textures, veggies, and protein. You can easily make a week's worth of meals by mixing and matching sides into bowls.
Here's one that has some of my favorite sides: a slightly sweet and tangy curry, coconut cauliflower rice, and black lentils sautéed with shallots (recipe below).
The toppings are another fun component to play with. I often add some yogurt and cilantro or make a salad dressing that works with the ingredients and sides. I can see also adding some more cooked veggies to the curry, like peas and broccoli. Enjoy!
