Apple Cinnamon Kugel {grain-free}

I've been on an apple tear. After testing several versions of Invisible Apple Cake, I realized I'm just a few steps away from having the grain-free apple kugel I've been dreaming about.

This is a different kind of apple kugel. The apples serve as the noodles. No actual flour-based noodles here. You probably could add noodles but I rely solely on the apples.

I use sweet apples, usually Pink Lady or Honey Crisp or some combination, but any firm apple will work. Granny Smith apples will give you a more tart flavor. The sweet flavor comes primarily from the apples, raisins, and cinnamon with a small amount of maple syrup or honey for sweetener. If your apples are very sweet you can probably omit the tablespoon of sweetener.

Almond flour works well, or you can use another nut or seed flour. For coconut flour one tablespoon is enough, and for other nut or seed flours use add the same amount as almond flour. The flavor and texture may change a bit depending on the flour you use.

For pan size, I use a 4-inch by 7-inch pan, and any similar size pan will work. I also baked one round in both an 8-inch by 8-inch pan (takes a bit less time) and I had low profile squares, so that's another option.

Be sure to cool the kugel completely before slicing. It slices best when cooled or straight out of the refrigerator. If you like your kugel warm, you can slice the pieces and then warm them for a bit before serving.

I've tested with yogurt, however I also want to try cottage cheese and cashew ricotta cheese. I'm pretty sure both will work. Another option is goat cheese or cream cheese. Enjoy!

    My mother worked at a Jewish deli in NYC when I was a young girl.
    I would say this is like raisin pudding! I’m glad to pass one a somewhat similar experience to my boys.
