Almond Cocoa Bites {quick & easy}

 Almond Cocoa Bites

Here's my latest go-to quick energy snack. It's stashed in my freezer and I only have small amounts of it every so often when I need a quick boost. It's great on trips and hikes, and it can be added to ice cream or yogurt or whatever your heart desires.

I was craving a bit of chocolate, so tossed some sliced almonds, cocoa, and a bit of maple syrup in my food processor, and came up with a quick and easy almond cocoa bites recipe. It can also be pressed into bars if you'd like. I may experiment a bit more with this recipe, possibly adding a date to the mix to help it stay together. For now, I like the slight crumble when it's pressed in a thin layer. When pressed into a thicker layer it stays together in bars well enough, and I keep it in the freezer for even better results.

So give this short list of ingredients a spin in your food processor and then press it on to parchment paper and store in your freezer. You can probably store it in your refrigerator as well. Another option is to press the mixture together firmly and slice into bars to freeze or wrap individually.

      Hi Ruth, yes whole almonds works, just make sure to pulse them well before adding the other ingredients.
