Here's my favorite Pho broth. It's quick and easy to make, and easy to modify. I use a light vegetable broth and then build on it with a combination of aromatic spices and vegetables. The result is a deeply flavorful, slightly sweet broth that goes well with your favorite Pho additions.
The version in the photos is made up of kohlrabi noodles, shiitake mushrooms, broccoli, red pepper, mint leaves, cilantro, and sesame egg bites. The egg bites are a great way to add protein instead of adding tofu or other protein. I've included the recipe for sesame egg bites as well.
I buy the kohlrabi noodles at Trader Joe's, sold in a bag that you can steam the noodles in or you can stir fry them in a pan if you prefer. Other noodle ideas include spiraled zucchini, carrots, buckwheat noodles, lentil spaghetti, or shredded cabbage noodles.
The Pho broth is easy to store in the refrigerator for a few days, or freeze for a few months. It's also great to make all the parts ahead of time and then just pull it together for a warm meal any time of day. Enjoy!
