
The version in the photos is made up of kohlrabi noodles, shiitake mushrooms, broccoli, red pepper, mint leaves, cilantro, and sesame egg bites. The egg bites are a great way to add protein instead of adding tofu or other protein. I've included the recipe for sesame egg bites as well.
I buy the kohlrabi noodles at Trader Joe's, sold in a bag that you can steam the noodles in or you can stir fry them in a pan if you prefer. Other noodle ideas include spiraled zucchini, carrots, buckwheat noodles, lentil spaghetti, or shredded cabbage noodles.
The Pho broth is easy to store in the refrigerator for a few days, or freeze for a few months. It's also great to make all the parts ahead of time and then just pull it together for a warm meal any time of day.
