Coffee Ice Cream {dairy free}

Coffee Ice Cream

If you love the flavor of coffee, or just like ice coffee and coffee ice cream, you just might enjoy this treat. It's simple to make and can be consumed immediately, or frozen for later.

My younger son loves coffee. I think it's because it's so accessible, with two Starbucks in walking distance from school. It's also a great place to hang out, and the drinks are sweet and tasty—and expensive for students in middle school.

So he started making his own frozen coffee drinks, decaf. I have to admit, I like them too, even though I'm not a coffee drinker. And this recipe can be used as a frozen coffee drink or as coffee ice cream.

We use coconut milk, but any kind of whole milk or cream will work.

    Hi,
    If I am SCD and can't use freeze-dried coffee, is there a way to do this (less ice perhaps) with a shot or two of cold espresso?
    Thank you!
