Vegetable Pad Thai {grain-free}

Vegtable Pad Thai

My son Max tipped me off to kholrabi noodles a few months ago, but it wasn't until I was near a Trader Joe's that I decided it was time to try them as an alternative to other vegetable noodles I've used, like zucchini, shredded cabbage, and carrots.

It's gluten and grain-free, but it's not SCD legal. It's from the same family of vegetables as cabbage, broccoli, cauliflower, kale, and Brussel sprouts. So if you're following SCD, replace the kholrabi with zucchini noodles, shredded cabbage, or other vegetable noodles, such as peeled carrots, butternut squash noodles, or some combination of vegetable noodles. Kohlrabi actually reminds me of a slightly thicker version of shredded cabbage noodles.

My original pad thai recipe dates back to my early days, but it holds up well, so this recipe is similar. Feel free to add your favorite cooked protein to this mix, such as a scrambled or fried egg, or other protein. Enjoy!
