English Muffin {almond flour}

My first two English Muffin recipes are single-serving, quick and easy: the standard English muffin and a cinnamon raisin English muffin. Just toss some flour, baking soda, and egg in a microwave-safe ramekin and microwave on high for a minute or so. Variations of muffin recipes trend on and off and are an easy way pull together a piece or two of bread to complete a snack or meal. I added them to my first cookbook when I updated it a few years ago.

This new addition works the same way. It's quick and easy to pull together but uses just almond flour. You can use any nut or seed flour really, so totally up to you. The butter in the photo is actually plant butter which is salted and ready to spread and bake with. Or add some mashed avocado, jam and nut butter, or maybe a fried egg. Enjoy!

      Thanks, Nicola! I just removed the mention of oil in the second step. I don't use oil in the final recipe. I had tested it with oil but found I didn't need it.
