"I was heartbroken when my doctor told me I needed to go on an immune protocol diet due to a health concern. As a vegetarian, a extremely low sugar no grain diet is extreme. This cookbook has been invaluable to me. It not only provides recipes, but gives instruction on how to alter the recipes given the type of diet you are on--exchanges you can make. Further, many of the recipes I've been able to easily alter to reduce the sugar content even further or exchange it for a different sugar source (like a half cup of honey for a mashed banana). Some of the recipes are easier than there flour counterpart, like the every day pie crust. I can't recommend it enough.

I've recommended it to so many friends who are on an immunological related diet. One of them, I brought a quiche made out of it for a Christmas party. She was so incredibly happy to have something she could eat which tasted GOOD. You have no idea how frustrating it can be when your diet is so limited."

"First, I rarely ever write reviews, but THIS book needed a review!! Let me explain why… I am an avid cookbook collector (hoarder) and this is THE cookbook that I always pull off the shelf when I want to make a healthy dessert or any baked good. There is virtually a recipe for every common baked good and treat (chocolate chip cookies, brownies, cakes, scones, waffles, pancakes, tortillas, crepes, savory dinners, you name it). Erica’s recipes are always simple to execute with everyday ingredients (for the paleo-friendly, SCD-friendly, gluten-free, grain-free, and /or dairy free pantry), and always full of flavor. Gluten free baked goods rarely taste like their gluten filled counterpart, but Erica’s recipes taste almost identical to the real deal. For someone with autoimmune disease who is always working on gut health and making wise decisions for optimal health, this book has been an invaluable asset (thank you Erica!!). I have many cookbooks that I rarely pick up or only have a few favorites that I turn to. But, you will drool over every single recipe in this book and I promise your family (even the dairy and gluten eating members) will love how they all taste!! Get this book! If there was one book you needed to make healthy desserts and baked goods, THIS is the one, don’t waste your time hoarding and searching through other books!"

"This is an excellent cookbook that has become my favorite. I have really enjoyed making a lot of the recipes.
The Chocolate Banana Bread recipe is one of my favorites--it's delicious. The first chapter discusses different flours, etc., which I found to be informational and very interesting. Some of the recipes call for almond flour, too. This is a fun cookbook that I highly recommend!!"

    Hi Erica, I made the chocolate cake and cheddar biscuits. The chocolate cake was fabulous, but the cheddar biscuits (page 43) needed some tweaking. The batter was very thin (it puddled) when following the recipe. Is it possible that the ratio of milk to flour is off?
    The recipe states 1 1/4 cups (300ml) of milk and 2/3 cup (70g) of coconut flour. I had to add a lot of oat flour to get a good consistency.

        Thanks for checking this. I used butter and oat milk instead of coconut milk because 'other milk' was an option. BTW I have your SCD book as well. We're following the IBD-AID diet for my daughter and your books have greatly expanded our meal and snack choices. Thanks again 🙂

    My neighbor suggested I try your site. I have just been diagnosted with Diverticulitus. No berries, seed, nuts, and easy on the gut recipes. This will be a life time of change but hopefully sites like your will make it easier. Any recipes on your site that you recommend for this condition. I am allergic to almonds and garlic as well. The Coconut Flour Cookbook has recipes using coconut, which is not a tree-nut, so you may want to consider using just coconut flour.

    Does this cookbook work for the SCD diet also?

      Most of the recipes do, some do not. There are many that can easily be modified, for example, replacing maple syrup with honey.

    Hi there, I have a question on the coconut flour cookbook. I have allergies to dairy and eggs on top of gluten, and am trying to stay low glycemic. Are there suggestions in your book for replacing dairy and egg products for various recipes? Lower glycemic option by chance?

      Wow, you're timing is great. I'm working on a bunch of recipes for low glycemic and keto. I'll try to post the basics of how to sub with low glycemic soon and then stay tuned for more on the recipes! For egg, you can usually use up to 2 flaxseed eggs to replace eggs.

    Hello! Trying to enter contest - not sure if I am doing this right! Our favorite recipe is the coconut pancakes. I am a 40 year old mother of 3 daughters (8-6-4). My 6 year old and I suffer from many digestive problems and truly appreciate you taking the time to post recipes, advice, etc. Coconut flour is really the only safe flour for her - so thank you-thank you- thank you!
