Tangy Peanut Sauce and Veggies image

If you're a fan of peanut sauce that's packed with flavor, you'll love this recipe. You just need a few key ingredients, and it can easily be doubled or tripled, which I recommend. This sauce is great with a variety of dishes and can easily serve as a dressing for salads, or as a dip for raw and blanched veggies.

As you can see from my photos, I love using this as a sauce for a plate of veggies. Either stir fried or steamed veggies works. If stir frying, I recommend steaming the broccoli and green beans for about 5 minutes to soften them before adding them to the pan so they can cook along side the peppers and mushrooms and be at the same tenderness.

I usually steam broccoli, green beans, mushrooms, and bell peppers for about 12 minutes, or until slightly tender. Then you can plate the steamed veggies over cooked cauliflower rice, and drizzle the sauce over the plate of veggies and rice. 

Feel free to replace the peanut butter with your favorite nut or seed butter. And to add a bit of a kick to the sauce, add a pinch of red pepper flakes. Enjoy!

    This is such a tasty, easy sauce! Another win Erica! I paired it with the Chilli Lime Cauliflower rice, steamed veggies and the chicken carnitas and made homemade Chipotle bowls. I made regular rice for the non SCDer’s and everyone raved about it all. Thanks for another option to add to my meal rotation!
