
I just had to test some of my cookie recipes with the viral "girl dinner" yogurt cheesecake recipe. For the record, this is not really cheesecake. But if you're a yogurt lover (diary-based or dairy-free), and possibly even if you're not, you'll love this two ingredient, no-bake hack using Greek yogurt (or any thick or dripped yogurt) and cookies.
The popular version uses Biscoff cookies and Greek yogurt, however I couldn't resist trying this with one of my cookie recipes. Biscoff cookies are very sweet since they are loaded with refined sugar and brown sugar syrup. The cookie dissolves in the moistness of the yogurt and sweetens the yogurt over a period of time, at least 4 hours or overnight.
I tried this recipe with ginger snap cookies, graham cracker cookies, and hermit cookies and all three worked well, but really any cookie will work here. My favorite is the hermit cookies because the dough is very smooth so it blends well with the yogurt (thanks to the almond butter).
If you really want to go to town you can add berries, honey or maple syrup, flaxseed, chia seed, hemp seed, and other goodies. You can also crumble the cookies into the yogurt for faster results. And now you have another fun ingredient to add to your yogurt creations. Enjoy!

"Girl Dinner" Yogurt Cheesecake
Ingredients
- 2 cups yogurt thick yogurt is best
- 8 small cookies this is an estimate; add how every many you want
Instructions
- Add the yogurt to a container with a top.
- Add the cookies to the yogurt, submerging them most of or all the way.
- Cover the yogurt and let it sit in the refrigerator for at least 4 hours or overnight. Eat over the next few days.
