
This frozen treat tastes exactly like a creamy sorbet thanks to the richness of the apricots, the yogurt, and the honey. It first appeared in my cookbook, Cooking for the Specific Carbohydrate Diet.
It's incredibly simple to make too. You just need a high speed blender to get it smooth. If you don't have apricots on hand you can use frozen apricots, or it works well with ripe peaches or nectarines. Make sure the fruit is ripe so it's sweet and juicy.
Any yogurt will work here, but whole fat or Greek taste the best. Enjoy!

Frozen Apricot Yogurt
Equipment
- High speed blender
Ingredients
- 8 ripe apricots pits removed
- ½ cup honey
- 1 teaspoon lemon juice
- 2 cups yogurt
Instructions
- Blend the ingredients in a high speed blender until smooth.
- Seal and store in the freezer for a few hours before diving in. It lasts for a month or so in the freezer.
