Garlicky Super Greens

I've been craving a hardy bowl of greens. I love my recipe for sautéed super greens in garlic, lemon, and olive oil. But I wanted something a bit more substantial this time.

Which is how I landed on this garlicky sauté of broccoli, kale or spinach, and cabbage. It makes a great side dish, or make it a meal with your favorite protein and some cauliflower rice or other rice or noodles.

Broccoli. I used fresh broccoli florets for the photos and cooked them for about six minutes. If you use frozen broccoli I recommend skipping the first step and adding the broccoli with the cabbage and kale.

Kale or spinach. You can use Dino (Tuscan) kale or curly kale. I used Dino kale for the photos but honestly I prefer spinach. The spinach is more tender and cooks fast. If you're not in a rush, give kale some time to steam cook with the cabbage.

Cabbage. I used green cabbage for the photos but I've had success with purple and Napa cabbage too.

1. Add the oil and then the broccoli and let cook for 6 minutes.

2. Add the garlic and sauté with the broccoli.
3. Add the kale, cabbage, and salt, and sauté for a few minutes.
4. Add the water and cover to steam for a few minutes before serving.

I like adding a drizzle of maple syrup (or honey) to the final mix to bring down any bitterness from the greens. Another option is to drizzle some lemon juice and top with some shaved Parmesan or other hard cheese.

Garlicky Super Greens

I love to char my broccoli in this dish. If you're into charred broccoli, heat up the wok or skillet until it's almost smoking. Carefully add the oil and then the broccoli and let it sit in the hot oil for a few minutes to darken the sides of it that are touching the wok. I keep a splatter screen or the top of the wok handy since it may splatter if the broccoli is moist. It works best with fresh broccoli.
To add a bit of a kick, include a pinch of red pepper flakes.
Another option is to add some lemon juice and Parmesan shavings or other shredded hard cheese.

Ingredients
 
 

  • 2 tablespoons olive oil
  • 3 cups broccoli florets one to two heads
  • 4 garlic cloves peeled and finely chopped
  • 3 cups chopped kale stems removed
  • 3 cups chopped cabbage
  • ¼ teaspoon fine salt plus more to taste
  • ½ cup water or broth

Instructions
 

  • Heat a wok or large skillet on a medium heat.
  • Add the oil and then the broccoli and cook for about 6 minutes.
  • Add the garlic and blend in and sauté for a minute.
  • Add the cabbage, kale, and salt and blend with a spatula. Sauté for a few minutes.
  • Add ½ cup of water or broth to the greens and cover to steam for about 5 minutes or until the broccoli and kale are fork tender.
  • Salt to taste and add a drizzle of maple syrup or honey to reduce any bitterness. Another option is to add a bit of lemon juice and top with shaved Parmesan or other hard cheese.
  • Store in the refrigerator for a few days or freeze for a few months.
