Mango Sorbet

If you're in search of a naturally sweet treat that will cool you down and quench your thirst, this mango sorbet is it.

The key to this recipe is to slice the mango once it's ripe. You can tell if a mango is ripe by gently pressing it with your finger. If it gives way, it's ripe. It will have a sweet, fruity smell and possibly some wrinkles.

A mango has a pit in the center, positioned the long way. To slice a mango, rest it on its edge and place the knife on top and a little off center while slicing downward. Move the knife around the pit to make it easier to slice. Then score each half of the mango into cubes and push the cubes outward so they can be scooped out with a spoon (see the photo below).

I use three ingredients in this recipe: mangos, lime juice, and some fine salt. Leave out the lime juice (or lemon juice) if you prefer the sorbet sweet without a slight tangy flavor. You can add one to two tablespoons of yogurt if you'd like to make it a bit creamier. I find ripe mangos exceptionally sweet, but if you'd like you can add about one tablespoon of maple syrup or honey to the mixture while blending.

Once all the ingredients are blended into a thick and creamy mixture you have two options: chill in the freezer for a few hours and then add to an ice cream maker, or chill in freezer and stir every hour for a few hours. It will be creamier with an ice cream maker, or a bit icier without. Both taste so refreshing!

The sorbet is great any time of day, and it goes great with cookies, yogurt, ice cream, or smoothies. Enjoy!

Mango Sorbet

I often adding one to two tablespoons of yogurt to make it a bit creamier, so that's another option for you, and any yogurt works here. Note that adding yogurt will make the sorbet tangier. Another option is full-fat coconut milk or heavy cream.
Leave out the lime juice (or lemon juice) if you prefer the sorbet sweet without a slight tangy flavor.
When you wait for your mangos to get really ripe you won't need to add any sweetener. Optionally you can add one to two tablespoons of maple syrup, honey, or other sweetener.
After chilling the sorbet for a few hours you can place it in an ice cream maker to reduce the ice crystals from forming, or just it enjoy it as is. I've also added it directly from the blender to the ice cream maker with great results, so either works.
This makes about a pint of sorbet so if you really like mango sorbet and want a lot to go around, double the recipe. It's much easier to double it when using an ice cream maker.

Ingredients
 
 

  • 2 ½ cups mangos very ripe; about two large mangos
  • 1 to 2 tablespoons lime juice or lemon juice; optional for a slightly tangy flavor
  • ⅛ teaspoon fine salt

Instructions
 

  • Slice and cube the mangos.
  • Add the mango cubes to a blender and blend until smooth.
    2 ½ cups mangos
  • Add the lime juice and salt and blend once more.
    1 to 2 tablespoons lime juice, ⅛ teaspoon fine salt
  • At this point you can add the mango mixture to an ice cream maker, or place the sorbet in a freezer-proof container and chill for a few hours, stirring a few times to keep it smooth.
  • Store in the freezer for a month or so.
