I received a recipe request several years ago for a cookie cake. My son wasn't eating almond flour or cookies at the moment so I recommended using either my chocolate chip recipe using eggs, or the recipe that is egg free to make a cake in a baking pan. I gotta say though, I've always wanted to share a cookie cake recipe, so here it is.
This recipe is so easy, and makes a great gift. You can pipe any kind of decoration your heart desires (pun intended). If you want to pipe melted chocolate, here's a nice tutorial that I used to form my little paper piping tool, using parchment paper.
If you're not eating chocolate, no worries, this cookie is great without it. To make it a bit more decadent, you can pipe one of my frostings on it, such as nut butter frosting, or coconut whipped cream.
