Apple Cider Donuts {almond & coconut flour}

I love combining almond and coconut flour in cake and donut recipes. They make a great partnership, have a light cake texture, and balance fiber and carbs well. That said, you can get the same great texture, spices, and flavors using my apple cider donuts make with almond flour or coconut flour.

All three of my apple cider donuts rely on the sweetness of the reduced apple cider and applesauce, plus a bit of added sweetener. If you're not going to add a topping to the donuts, you can add an extra tablespoon of sweetener to the batter and then sprinkle ground cinnamon on the top of each donut. I added my cinnamon sugar and maple glaze topping recipes below, or try the honey butter topping I add to pumpkin bread.

This recipe makes eight donuts, or you can make six large donuts. And if you don't have a donut pan, you can use the batter to make apple cider muffins. I recommend adding parchment muffin liners to the muffin molds.

    If I don’t have apple cider made, could I make these without it? If so do you think I should add more applesauce?

      Hi Kelly. The reduced apple cider serves as a kind of syrupy sweetener, so replacing it with honey or maple syrup would be a better swap. While you could use applesauce the donuts may not come out sweet enough.

        Good to know thank you so much and my son loved your carrot muffin recipe, I’m slowly trying to transition him to SCD he is a very picky eater and will only eat muffins / chicken nugget so I’m so thankful for you!

        Thanks! The honey worked! I didn't have a donut pan and my son loves muffins so I made them as a muffin. Do you have any suggestions for me to make them a little more moist? Maybe more applesauce? I am not using cider I used honey.

          Hi Kelly, great to hear they worked. To make them moister add a bit of olive oil or butter, about a tablespoon if they're sweetened enough as is, or yes more applesauce would work as well.
