Jalapeño Cheddar Zucchini Bread {almond flour}

I'm mostly a sweet bread baker, but I spotted a savory, cheesy, zucchini bread recipe using all purpose flour, pickled jalapeños, and cheddar cheese. I tested a few of my own versions with blanched almond flour and landed on this version.

The tangy flavor goes well with the rich texture of the bread. It tastes a bit like a light quiche. It's good at room temperature or warmed. It's great as breakfast, a snack, or part of a larger meal.

Pickled jalapeños. You can buy a jar of pickled jalapeños or make them (recipe below). It's somewhat easy to quick pickle jalapeños using water and vinegar, which is what I use. If you're really not into jalapeños you can leave them out or sub with chopped pickles or other picked veggie.

I wear dish washing gloves when prepping the jalapeños to avoid getting capsaicin on my hands. Capsaicin is the chemical compound that carries the heat and most of it is actually found in the white flesh of the jalapeño. I think between pickling it and baking it in the bread, the jalapeños mellow quite a bit and don't contribute much heat to the bread.

Cheddar cheese. I use very sharp white cheddar that's dairy-based, but use any you prefer. I haven't tested it with non-dairy cheddar but it should work.

Yogurt. I use sheep yogurt, but any yogurt works. Full-fat yogurt will lend more moisture and flavor to the bread. I haven't tested it with non-dairy yogurt, but it should work. You can also substitute with sour cream.

Eggs. I originally tested this loaf with two eggs, but found that three eggs gave a fluffier, more bread-like texture. That said, if you prefer a denser bread that tastes like a full-on quiche, go down to two eggs.

Jalapeño Cheddar Zucchini Bread {almond flour}

Update on 9/2/26: I reduced the amount of cheddar cheese from 5 ounces to 3 ounces.
I use extra sharp white cheddar but any kind of cheddar cheese works. For the yogurt, I use sheep yogurt, but any yogurt works.
To make this bread a bit denser and richer you can add up to ½ cup of yogurt and a little extra cheddar cheese (about 1 to 2 tablespoons). It depends how dense you like your quick breads and this one specifically. More yogurt and cheese will also make it a bit tangier which I like. I've made it both ways and both are good.
I recommend a bread pan around 8 inches by 5 inches.
I use a food processor to shred the zucchini. I have a shredding attachment. You can also shred by hand with a cheese grater.

Ingredients
 
 

  • 2 cups blanched almond flour
  • ½ teaspoon fine salt
  • ½ teaspoon baking soda
  • 2 green onions (scallions) trimmed and thinly sliced
  • 1 ½ cups shredded zucchini
  • 3 ounces grated cheddar cheese plus about ¼ cup for the top
  • ½ cup pickled jalapeños chopped plus a handful for the top; recipe below
  • 3 large eggs
  • ¼ cup yogurt or sour cream

Instructions
 

  • Preheat your oven to 350℉.
  • Prepare a baking pan with parchment paper.
  • Add the flour, salt, baking soda, onions, zucchini, jalapeños, and 4 ounces of the cheddar cheese, and blend well with a spatula.
  • Add the eggs and yogurt to a small bowl and whisk to combine. Then add them to the flour mixture and blend well again with a spatula.
  • Scoop the batter into the baking pan and add extra cheddar cheese and handful of jalapeños on top.
  • Bake for 50 minutes or until the top is firm to touch.
  • Cool and slice. Store in the refrigerator for a week or so or freeze for a month.

Pickled Jalapeños

I use gloves to chop these peppers to prevent transferring the jalapeño juice from my hands to my face or eyes.
These are the quick-pickled kind of pickled jalapeños. They can be stored in the refrigerator for a few weeks.

Ingredients
 
 

  • 4 small jalapeños
  • 1 cup white vinegar
  • 1 cup water

Instructions
 

  • Add the vinegar and 1 cup of water to a small saucepan and bring to a steady boil.
  • Trim and slice the jalapeños either way (across if you want them as whole rings). Remove the seeds and white inner flesh.
  • Turn the heat off of the simmering vinegar mixture. Add the jalapeños to it and let them sit in the vinegar mixture for at least 15 minutes.
  • Store in jalapeños in the refrigerator for a few weeks.
