
Baking apples cinnamon muffins is a great way to sweeten the smell of your kitchen. This is one of three grain-free recipes for Apple Cinnamon Muffins. The other two use coconut flour and a combination of coconut and almond flour.
They're all moist and tender, so it's going to depend on which flour or combination of flours you prefer to use when baking.
Sometimes the topping is the best part of the muffin, however these muffins are packed with apples and cinnamon throughout. I sprinkle a bit of ground cinnamon on the top of each muffin. If you're a fan of hearty muffin toppings here are a few options to place on top of each muffin before baking:
- candied walnuts
- cinnamon and coconut sugar
- cinnamon and maple sugar
- cinnamon and date sugar
- streusel topping

My batter was really dry for this didn’t look like yours at all… was it supposed to have butter or an oil in it? I followed the recipe exactly.
Hi Krista, I haven't had an issue with dry batter so I'm wondering if you're using almond flour or coconut flour or if you possibly left out one of the moist ingredients. This batter is usually on the wetter side and the muffins are quite moist as well. And the fresh apples add moisture as well.
