Green Goddess Dip & Dressing

There are so many uses for this dressing or dip that I recommend you eat it with anything that needs a bit of a citrus and green flavor kick. It's great in bowls, on salads, as a dip for grilled veggies, roasted veggies, and all kinds of protein.

It's also so easy to make, so keep the ingredients on hand and you'll always have an impromptu snack plate at the ready. It's also great to pack for a lunch or on-the-go snack.

Some more ideas to pair with as a dip:

  • Almond saltine cracker
  • Parmesan Thyme Crackers
  • Sesame Dijon Crackers
  • Seeded Almond Cracker
  • Hummus & Pita
  • Crispy Roasted Broccoli

In the photo, it's served with carrots, Persian cucumbers, sweet peppers, and Kalamata olives. Enjoy!

Green Goddess Dip & Dressing

I usually don't soak the cashews ahead of time, but feel free to do so to make it easy to blend them.
I prefer this without garlic but feel free to add a single clove of garlic in it.
Servings: 32 servings or tablespoons
Calories: 44kcal

Equipment

  • Blender or food processor

Ingredients

  • ⅓ cup olive oil
  • 6 tablespoons lime juice or lemon juice
  • 1 small shallot peeled and trimmed
  • 1 cup fresh dill
  • 1 cup fresh spinach leaves rinsed
  • 1 cup raw cashews soaking optional
  • 1 green onion trimmed
  • ½ teaspoon salt

Instructions

  • Add all the ingredients to a high speed blender and blend until it is smooth.
  • Store in the refrigerator for a few weeks.
